Here is out recipe of the week for April 22-29, 2008:

This is from my dear friend, Michelle.
She once said she's not much of a cook, (or something like that, criticizing her cooking skills) but every time she brings food to a party or I eat at her place the food is AWESOME!

With that in mind, I urge you to try her recipe for Caramel Popcorn. I'll be making it in a few weeks for game night. Yes, I'll be making a double batch because I know it won't last very long.

Caramel Popcorn

5 qts popped corn
1 cup butter, 2 sticks
2 cup brown sugar
1/2 cup light corn syrup
1 tsp salt
1/2 tsp baking soda

Spread freshly popped corn in large shallow sheet pan. Put in very slow 250 degree oven to keep warn and crisp. combine butter, brown sugar, corn syrup and salt in a 2 qt . heavy saucepan. Place on medium heat, stir until sugar dissolves. continue to boil until firm ball stage,( 248 degrees,) about 5 minutes. Remove from heat, stir in soda. It will foam. Take popcorn from oven and pour hot caramel mixture over it in a fine stream. Stir to mix well. return to oven 45-50 minutes, stir every 15 minutes. cool and serve or store. To store pour into airtight containers and set into cool place. makes 5 qts or about 2 pounds.
