Here is our recipe of the week for April 30-May 6, 2008:
Ok, this may look and sound crazy, but these are addictive. Like chocolate covered peanuts, there is something appealing about the salty and sweet combination of these decadent treats. This would be the perfect -and fast- thing to whip up when you need something totally unforgettable to put on your Pass It On Plate.
1 small (12 oz) bag semisweet chocolate chips
1 small bag milk chocolate chips
1 small bag white chocolate chips
1 bag potato chips
Line 2 cookie sheets with parchment wax paper.
Pour all the chocolate chips in a microwave safe bowl and microwave until smooth. Try one minute at a time on medium power. After each minute in the microwave, stir the chocolate briefly. This should take about 2 or 3 minutes total time in the microwave for the chocolate to become smooth. Do not overheat the chocolate in the microwave or the texture will change from smooth to grainy and lumpy. Yuck.
Dip half of each chip in chocolate to coat, allowing the excess chocolate to drip back into bowl. Lay each dipped chip on the prepared cookie sheets. Refrigerate for about 15 minutes, or until chocolate is set. Store in an airtight container for up to one week.
Note: when putting these on your Pass It On Plate, you may want to take extra care not to crush the chips. It's ok to transfer the chips to a container and place the container on the plate. This will help keep the chips from breaking up before they can be exclaimed over, tasted, and enjoyed.
Another note: try this with traditional pretzels, peanut butter filled pretzels, banana chips, or crispy chow mein noodles.
